Dry Aged Tasting Notes and Process

At Open Range, we take pride in our meticulous dry-aging process, which ranges from 14 to 45 days to bring out the best in every cut. Leaner cuts are aged for 14 days to preserve their delicate flavor, while cuts with more marbling and fat  benefit from a longer aging period of 29 to 45 days.

Dry aging is a carefully controlled process in which the beef is stored in an environment with precise temperature, humidity, and airflow to allow the natural enzymes to break down the meat’s fibers. This results in a steak that’s incredibly tender and flavorful, with a deeper, more complex profile. As the meat ages, the flavors intensify, developing earthy, nutty, and blue cheese-like undertones that elevate each bite to a whole new level of savory richness.

Started with wonderful drinks, my martini rocks was perfectly made with one huge rock to keep the chill. Duck confit was so good I had to pick it up and chew on the bone. Delicious.  The 22oz tomahawk bison ribeye steak was done perfectly. The waitress recommended medium, it was melt in your mouth tender and just delicious. Crème brûlée with huckleberry topped it off. The waitress was right on point with recommendations and service. We had a very memorable experience. Can’t wait to go back.

Beautiful restaurant, really liked the atmosphere. High ceilings, wire trees with sparkling white lights, wonderful framed pictures of dogs on the wall. We had the short ribs and the pork chop. Well seasoned, attractive dishes with great flavor. Can’t wait to go back!
